Turkey Frittata

Preparation :

     
     
Heat oil in 2 large non stick oven proof frying pans.
Add onions and peppers and cook for 3-5 minutes.
Stir in potatoes and cook until goldenand then add chopped tomatoes
Add turkey and mix over medium heat (est. 5 minutes)
In a mixing bowl, beat together eggs and milk with salt and pepper.
Pour egg mixture into skillet and cook for another 4 minutes
Sprinkle with parsley and cheese shred.
Brown under broiler for 5-7 minutes until frittata puffs
